INGREDIENTS
2x chicken breast fillets
1 cup panko crumbs
2 tbs sesame seeds (black & white) or Everything Bagel Seasoning
2 eggs, lightly whisked
2 tbs plain flour
1 head broccoli, chopped
1 bunch pak choy, chopped
1 zucchini, sliced
Obento Tonkatsu Dipping Sauce
Potato or Rice to Serve
Extra Virgin Olive Oil for pan frying
METHOD
Peel and boil your potatoes for mashing or get your rice cooking while you prepare everything else.
Slice your chicken breast fillets in half and tenderise with a meat tenderiser until about 1-1.5cm thick
Lay out a long piece of baking paper or foil
Mix together your panko crumbs and sesame seeds and pour onto one half of the baking paper/foil.
Spread your flour out on the other half of the foil.
Preheat large frying pan over medium heat with enough olive oil to pan fry your chicken.
Coat your chicken in the flour, then the egg and then in the panko crumbs and sesame seeds.
Pan fry for 6-8 minutes on each side making sure each side is golden and crispy.
While the chicken is cooking, steam your vegetables, either on the stove or in the microwave.
Slice your chicken and serve on top of mashed potato or rice with your steamed veg. Add a drizzle of tonkatsu sauce on top of your chicken.
